Join Laura Fiorvanti as we take and an in-depth look at the joys of food & wine pairing.
This three part series is designed to help you elevate your working knowledge of any wine & food program, but is also perfect for the enthusiast looking to advance their home pairings.
Classes will be held Wednesdays, November 2nd, 9th, and 16th from 1-2:30 pm.
Each class will feature 6 wines, paired with light bites to complement and contrast.
Class #1 November 2nd, 2022 1-2:30 pm - Salt & Acidity
The first class will explore the relationship between acidity and salt. Learn how and where wine gets its acidity, and how we can use acid in wine to balance and enhance foods. Acidity is often thought of as the most important aspect of a wine for pairing, balancing salt, matching acidity in tart foods or vinaigrettes, and bringing out the integrity of fresh, simple flavors in high quality ingredients, like the gastronomical equivalent of a highlighter pen.
Class #2 November 9th, 2022 1-2:30 pm - Fat & Tannin
The second class will look at the relationship between tannin in wine, and fat in food. Tannin and fat bind together on the palate, and work in tandem to soften the austerity of the wine and and cut through the richness of the fat. Wines that exhibit a high amount of tannin, like many Italian reds, Cabernet Sauvignon, and Syrah, often shine when paired with meats, charcuterie, cheeses, and dishes made with vegetables with higher fat contents or oils.
Class #3 November 16th, 2022 1-2:30 pm - Heat & Sweet
In the third and final class, we'll discuss the often misunderstood and sometimes maligned sweet wine category, and their relationship with foods that have sweetness, from light fruits, to BBQ sauce, to desserts, and how wines with a touch of sweetness can complement spice and heat in food. We'll contemplate wines that bring a ripe fruit profile, like Zinfandel, with a light fruity sweetness, to richly sweet wines like Madeira, Port, or Sauternes.
