Class #2 November 9th, 2022 1-2:30 pm - Fat & Tannin
The second class will look at the relationship between tannin in wine, and fat in food. Tannin and fat bind together on the palate, and work in tandem to soften the austerity of the wine and cut through the richness of the fat. Wines that exhibit a high amount of tannin, like many Italian reds, Cabernet Sauvignon, and Syrah, often shine when paired with meats, charcuterie, cheeses, and dishes made with vegetables with higher fat contents or oils.
